Easy Pork Carnitas Rice Bowls

Easy Pork Carnitas Rice Bowls are a quick 10 minute dinner recipe loaded with juicy meat, rice and fresh pico de gallo, gaucamole and queso fresco.
  • 3 c. pork carnita with ¾ c. liquid
  • 1⅓ c. cooked brown rice
  • 1⅓ c. pico de gallo
  • 1 c. guacamole
  • ½ c. queso fresco, crumbled
  • ½ c. salsa verde
  1. In a hot skillet over medium-high heat, add the olive oil and shredded pork. Allow to sear for 2 minutes and then add the reserved carnitas juices to the pan. Saute for 3-5 minutes or until the juices are evaporated and the bottom of the pork is browned.
  2. Arrange ¼ of the meat in each of 4 bowls. Divide the remaining ingredients among the bowls and serve immediately!
